Crispy turkey with sweet and sour sauce

Here is a light and easy to prepare second course: Crispy turkey with sweet and sour sauce.
I took this recipe from "Cucina moderna" an Italian cooking magazine.

Serves 4

 Sliced turkey breast 400 g (14 oz)
 Corn flakes 60 g (2.5 oz)
 Egg white 1
 Tomato puree 6 tbsp
 Shallot 1
 Vinegar 1 teaspoon
 Cane sugar 1 teaspoon
 Extra virgin olive oil 2 tbsp
 salt to taste
 Crumble the corn flakes, slightly bit the egg white with a pinch of salt and cut the meat into 2 cm wide sticks. Run the turkey at first in the egg whites and then in the corn flakes, then arrange them in a baking tray covered with baking paper (photo 1). Pour a drizzle of oil and cook in preheated oven at 200° C for about 15 minutes.
 Peel and chop the shallot and let it brown with a tablespoon of olive oil, add the sugar and, after a few seconds, the vinegar. Let it evaporate, add the tomato puree, a pinch of salt and cook over low heat for 10 minutes (photo 2). Serve the hot turkey with the sauce on the side.
